Job Overview:

We are looking for a talented and passionate South Indian Chef to join our culinary team. The South Indian Chef will be responsible for preparing and presenting authentic South Indian cuisine, ensuring the highest quality and consistency in every dish. The ideal candidate will have a deep understanding of South Indian flavors, ingredients, and cooking techniques, as well as a passion for delivering an exceptional dining experience to our guests.

Key Responsibilities:

  1. Menu Development:
  • Design and create an innovative South Indian menu that reflects authenticity while catering to current food trends.
  • Incorporate seasonal ingredients and ensure a diverse range of dishes, including traditional favorites such as dosas, idlis, sambar, and curries.
  • Collaborate with the Executive Chef to continually update the menu, introducing new dishes and seasonal specials.
  1. Food Preparation and Presentation:
  • Prepare, cook, and present South Indian dishes according to the highest standards.
  • Ensure all food is consistently prepared in a timely manner, with attention to detail in both flavor and presentation.
  • Maintain high standards of food hygiene and safety, ensuring compliance with health regulations and company policies.
  1. Quality Control:
  • Monitor the quality of ingredients and ensure only the freshest produce and spices are used in the preparation of dishes.
  • Taste and evaluate dishes to ensure they meet quality and flavor standards.
  • Maintain consistency in portion sizes and presentation.
  1. Kitchen Management:
  • Supervise and train junior kitchen staff on South Indian cooking techniques and recipes.
  • Ensure the kitchen operates efficiently by managing inventory, controlling waste, and minimizing food costs.
  • Maintain a clean, organized, and safe kitchen environment at all times.
  • Assist in inventory management, ordering ingredients, and ensuring adequate stock levels of South Indian ingredients and spices.
  1. Guest Interaction:
  • Ensure guest satisfaction by delivering high-quality, flavorful South Indian dishes.
  • Occasionally interact with guests to receive feedback and provide recommendations on South Indian specialties.
  1. Collaboration and Teamwork:
  • Work closely with other kitchen staff, including sous chefs, line cooks, and kitchen assistants, to ensure smooth kitchen operations.
  • Communicate effectively with front-of-house staff to coordinate the preparation and timing of dishes.

Key Qualifications:

  • Proven experience (X+ years) as a South Indian Chef or in a similar role, with a strong background in South Indian cuisine.
  • Expertise in preparing traditional South Indian dishes, including dosa, idli, vada, sambhar, rasam, and regional specialties.
  • Knowledge of South Indian ingredients, spices, and cooking methods.
  • Ability to work efficiently in a high-pressure, fast-paced environment.
  • Strong leadership and communication skills to manage kitchen staff effectively.
  • Passion for food and a deep understanding of flavor profiles and regional culinary traditions.
  • Experience in kitchen management, inventory control, and cost management.
  • Ability to work flexible hours, including weekends and holidays, as required.

Education & Experience:

  • Culinary degree or relevant training from a recognized culinary school (preferred).
  • Previous experience in South Indian cuisine in a fine dining, restaurant, or hotel setting (required).
  • Familiarity with South Indian culture and cuisine trends.

Skills & Attributes:

  • Expertise in traditional South Indian cooking techniques, including dosa-making, steaming, and frying.
  • Knowledge of food safety standards and practices.
