Job Overview

We are seeking a mid-level Pastry Bakery CDP Junior Sous for a Full-Time position in Leh at GRAND DRAGON. The ideal candidate should possess between 4 to 6 years of experience and demonstrate exceptional skills in pastry and bakery arts, with a strong commitment to maintaining the highest standards of food safety and quality.


Qualifications and Skills

  • Minimum 4 years of hands-on experience in French pastry techniques with an ability to create a variety of pastries that meet high culinary standards.
  • Proficient in chocolate tempering, demonstrating detailed knowledge of different types and their uses in pastry arts.
  • Experienced in bread baking with the ability to produce a range of both artisan and classic bread products.
  • Skilled in cake decoration, using different techniques to produce visually stunning and tasteful cakes.
  • Exceptional time management skills to coordinate and prioritize tasks effectively in a fast-paced kitchen environment.
  • Proven team leadership capabilities showcased through previous roles, fostering cooperation and productivity among team members.
  • Strong adherence to food safety compliance to ensure all products meet regulatory and company standards.
  • Ability in inventory management to maintain optimal stock levels and reduce waste without compromising on quality.


Roles and Responsibilities

  • Oversee daily operations of the pastry and bakery sections to maintain production standards and efficiency.
  • Collaborate with the head chef to develop creative menus emphasizing quality and aesthetic appeal.
  • Ensure all bakery products meet quality and presentation standards of GRAND DRAGON while adhering to recipes and portion standards.
  • Lead, train, and mentor junior kitchen staff to advance their culinary skills and ensure consistent production quality.
  • Manage kitchen inventory and ordering procedures to ensure availability of key ingredients while minimizing wastage.
  • Maintain a clean, organized, and safe kitchen environment in accordance with all regulatory and health standards.
  • Interact with guests when necessary to gather feedback and incorporate suggestions into the culinary offerings.
  • Assist in budget planning and monitoring to align production costs with financial guidelines and targets.
